Miss Lisa's Meatloaf

  • 1 Carrot, grated
  • 1 Medium onion, chopped fine
  • 1 Stalk Celery, chopped fine
  • 4 Fresh Mushrooms, chopped fine
  • 1 Clove Garlic, minced
  • 1 Pound Ground Chuck
  • 1 Pound Ground Round
  • 1/2 Pound Savory Sausage
  • 1 egg
  • 3/4 Cup Dr. Dan's BBQ Sauce
  • 1 Cup dry bread crumbs
  • Salt and Pepper

Sauté the vegetables in 1 Tbs. of Olive Oil until soft. Season with Salt and Pepper, and a Pinch of Essence or other spice blend.

Combine the vegetables with the meats, Dr. Dan's Barbecue Sauce, egg, bread crumbs, 1 teaspoon of Salt, and 1/2 teaspoon of Pepper. More if you think it tastes better. Fold together, form into a loaf and bake at 350 until done. You know it's done when a meat thermometer reads 160 or higher.

The left-overs are great the next day as a sandwich with more Dr. Dan's BBQ Sauce on it!!!
